It is widespread knowledge that one can test how old an egg is by testing for buoyancy when dipped in water, but few know the science behind this.
Eggshells are porous, they allow air to move through them. As eggs age, they take in air and develop an air pocket. When you put an egg n a cup of water and the egg floats, it indicates the egg is old and has a large air pocket. If it remains on the bottom, the egg is usually safe to eat.
#2 The Fact About Blood Tinged Eggs
The blood sometimes seen in an egg comes from the rupture of small blood vessels in the yolk. If one of these blood vessels is broken during the laying process, which can happen if the hen is startled while she’s forming the egg or if she’s handled roughly, then it will show up inside the egg as a red blood spot. It does not indicate the egg is unsafe to eat.
However, you could remove the blood spot with the tine of a fork or the tip of a knife if you prefer, but it’s perfectly edible.

So, what are those disturbing, ropey white strand of egg white floating in raw eggs? Those curly, white strings that bunch up at the edges of egg yolks are called chalazae. They’re actually twisted membranes that join the yolk to the end of the shell, and anchors the yolk in place in the center of the thick white.
Not only are these fibers completely edible, their presence is actually a good sign. The more prominent the chalazae, the fresher the egg! Confession time! What did you think they were?

The colour of an egg yolk is determined by the hen's diet. The more yellow and orange plant pigments there are in the grain fed to a hen, the more vibrant the colour of the yolk will be.
